This dish is suitable for vegetarians, just take out the meat ingredients, you can use any vegetables or leftovers from the fridge as well – whatever you fancy.
I’m a big fan of coconut oil and normally use that instead of the olive oil but vegetable/sunflower oil is fine as well. For the rice, I recommend using a rice cooker and not using the pre boiled bags you find in the super markets. I typically don’t use salt with this dish as I find the soy sauce makes it salty enough.
