Chicken and Mushroom Pie Recipe

It’s coming into winter now, the evenings are getting shorter and it’s definitely getting colder. One of my favourite warm me up dishes is this chicken and mushroom pie recipe. Serve with chips or creamy mash potatoes

It’s easy to make and doesn’t take more than 20 minute to prepare. Definitely one of my favourite dishes to warm me up in this cold Irish winters.

I used ready made puff pastry in the recipe below but you can make your own if you’d like.




Ingredients:

  • 6 Chicken Breasts
  • 2 Packets of Pancetta (or cut up bacon)
  • 3 Tablespoons of Plain Flour
  • Packet of Mushrooms
  • 1 Large Onion
  • 400 ml Chicken Stock
  • 300 ml Milk
  • 1 Egg (beaten for egg wash)

Method:

  1. Preheat the oven to 200 degrees celsius
  2. In a frying pan, fry the chicken until browned. Season with salt and pepper
  3. Remove chicken from the pan and put the bacon into the pan and cook for 3 minutes
  4. Add mushroom and onions and cook until the onions soften and brown
  5. Add the chicken back into the pan
  6. Add the tablespoons of flour and stir for another minute
  7. Add the chicken stock and stir for another 5 minutes
  8. Add the milk and bring to the boil
  9. Simmer for 20 to 30 minutes
  10. Add the contents into a pie dish
  11. Cut the puff pastry to size and place over the edge of the pie dish, covering the contents
  12. With a knife or fork, make some small incisions into the puff pastry
  13. Brush the beaten egg over the puff pastry
  14. Bake in the oven for 15 to 20 minutes until golden brown
  15. Enjoy! Serve with mash potatoes or chips
