Easy Chicken Fajita Recipe

I’m a big fan of chicken fajitas. Typically I would buy an old el paso kit and use that to season my chicken and vegetables but recently, I discovered how easy it is to make my own seasoning paste. Easy Hummus Recipe

I’m on a bit of a health buzz at the moment and trying to watch what I’ve been eating which means my pizza oven is getting a well deserved rest after the long summer. I tend to snack a lot and normally I run to the sweets press for a bar of chocolate or packet of crisps but I’ve turned to making hummus as I find it tastes nicer and isn’t the worst option when eaten in moderation. BBQ Pineapple Recipe

This BBQ Pineapple recipe goes great after a delicious BBQ. I never really thought about using the BBQ to cook anything other than meat but recently, I’ve started using it to cook pizza and now have started to do love BBQ pineapple soaked in Malibu.

With the summer here, I’ve decided to cook other things on the barbecue other than the regular chicken, steak, fish and sweetcorn. A friend introduced me to pineapple and rum on the BBQ so I gave it a go and haven’t looked back since.

Here is my Borago Chile Review

Borago in Santiago, Chile, is rated as the 36th best restaurant in the world according to this website. On a recent work trip to Santiago, I had the pleasure of visiting this fine restaurant and it is an experience I will never forget. Luckily, I work with a like minded bunch of foodies who all enjoy new experiences. We had one free night in Santiago and decided that this was probably a once in a lifetime opportunity to visit this restaurant. A few email exchanges later and we were confirmed for a Tuesday evening. I did some reading up on Borago on Tripadvisor and other reviews left for this restaurant and it got me even more excited. Every review I read gave it great feedback and it certainly did live up the expectation and the hype.

Cooking Pizza on Barbecue

In this post I’m going to talk about cooking pizza on barbecue. So in recent posts, I’ve been focusing a lot on pizza! Who doesn’t love a delicious thin base pizza with lashings of cheese, salami and some tomato sauce. You can check out some of my posts including healthy pizza toppings, my duck pizza recipe and my yeastless pizza dough recipe for some inspiration or ideas on what to make. I’ve cooked pizzas and garlic breads in my barbecue with a pizza stone for a few months now. Ever since a friend mentioned that it was worth trying, I decided to give it a go and experimented with different techniques until I got some really decent and consistent results. I have not looked back since! I always had a pizza stone that I used in our electric oven and found it to be ok, when compared to a metal tray, it made a small difference to the base, nothing special but where it really showed a huge improvement was in the barbecue.

Aldi’s Pizza Oven

Update – some people have asked where the best place to buy this is since they have stopped selling them in Aldi as it was a special buy. I’ve found a similar oven made by La Hacienda which can be purchased in Argos. The La Hacienda multi function oven is very similar in both shape and design. It is also available on Amazon and other online retailers.

So with the summer here in full swing, I decided to take a punt on an outdoor pizza oven that was available in Aldi for the grand total of €139 during one of their special buys. It’s far from the traditional Italian pizza ovens that can be purchased for well in access of €1,000 – €2,000 but this was worth a gamble at the price and it has certainly paid off! I’ve used this a few times since buying it and have made delicious pizzas every time.

Yeastless Pizza Dough

I hope you enjoy my yeastless pizza dough recipe below. I’m a big fan of pizzas and make them all the time at home when I have the time. The no yeast pizza dough is super easy and can be made when you’re in a rush or simply don’t have enough time to let the dough rise.

I really enjoy making pizzas from scratch, I normally leave it until the weekend when I have a bit of time and can plan it out. This is because the dough recipe I use (courtesy of Jamie Oliver here) requires me to leave the dough rise for an hour. This week, I was in a rush but was craving a pizza so decided to experiment with a dough that didn’t require yeast which meant I could make the dough quickly, stretch it out and put it straight into the oven.

This yeast free pizza dough recipe is really simple. Add all the ingredients into a bowl for your food mixer with a dough hook attachment and let that do the work for you. Don’t be afraid if it isn’t coming together, the key is giving the mixer time to blend it altogether. From experience, this can take up to 7 or 8 minutes before it starts to take the form of a dough, so resist the urge to add more water or flour for the time being. This dough will come out crispy and perfect every time!

Fried Tofu Recipe with Soy Sauce

Pan fried tofu is one of my favourite accompanying dishes in a traditional Chinese meal. Unlike western cuisine, in Chinese home cooking, you share a wide variety of dishes with your guests. They’re left in the middle of the table and each person has their own rice bowl and can take from any of the dishes in the middle. Meaning that you can try each and every delicious plate that’s been prepared.

Insane Kitchen – One Year On

So it’s the first anniversary since my blog went live! Woohoo! This day, last year, I added a few recipes I had written including my lamb chops and spinach recipe and my steak sandwich. I’ll be honest, in the beginning, I wasn’t sure if this was going to be something that would fade out or if I’d stick with it but I’m really glad I’ve stuck with it so far. It’s a great way for me to relax and switch off for a while and I hope that some people reading have managed to find some nice recipes on the site and have found it helpful.
